- 1 onion chopped
- 3 cloves garlic finely chopped
- ½ cup chopped tomatoes
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp turmeric
- 1 tbsp garam masala
- ½ tsp cumin
- 1 tsp coriander
- ¼ tsp cayenne
- ½ tsp smoked paprika
- 1 tsp lemon zest
- 1 tsp brown sugar
- 1 tbsp oil
- 1 cup beef stock

Method
- Heat a pan on a moderate heat and add the oil and chopped onion and garlic, sautee for a few minutes until the onion is translucent
- Add the spices, salt and pepper and continue to cook for a couple of minutes until the spices become fragrant Add the chopped tomatoes and brown sugar and bring to the boil
