Ingredients
- Braised Cabbage Ingredients:
- ½ green cabbage
- 1 onion
- 1 apple
- ¾ bottle of Steamer Basin Blond beer
- 1 tbsp honey
- 1 tsp mustard seed
- 2 tbsp fresh thyme finely chopped
- Salt
- Pepper
- Oil
- 1 tbsp butter
- Cheesy Toastie Ingredients:
- 1 loaf of your favourite crusty bread
- 2 egg yolks
- 140g cream cheese
- 1 heaped tsp Dijon mustard
- 100g grated cheddar cheese
- Worcestershire sauce
Beer Braised Cabbage served on Cheesy Toasties
Method
- Braised Cabbage Method:Finely slice the cabbage, onion and apple (a mandolin or food processor can speed this process up!)
- Heat a pot on a moderate heat and add a splash of oil
- Sautee the onion until softened and then add the cabbage and apple
- Add the beer, honey, thyme and the mustard seeds
- Put a lid on the pot and turn the heat down and let the cabbage cook down gently
- Once the cabbage is almost cooked remove the lid and start to reduce the liquid
- Once the liquid is almost all absorbed add the butter and then lastly season to taste with salt and pepper
- Set the cabbage aside and prepare the toasties
- Cheesy Toastie Method:Preheat the oven on grill
- Mix together the egg yolks, cream cheese, mustard and cheddar cheese
- Slice thick slices of the bread and lightly toast
- Spread the cheese mixture across the pieces of toast and place under the hot grill
- Cook for a couple of minutes (keep a close eye as they can burn very quickly!) until the cheese is bubbling and it is starting to brown
- Top the toasties with warm beer braised cabbage and add a splash of Worcestershire sauce over the top and enjoy!
