  • Plum Ingredients:
  • 6 x plums
  • 3 tbsp honey
  • 2 x star anise
  • 1 cinnamon stick
  • ¼ cup water
  • Bircher Ingredients:
  • 1 ¼ cups whole rolled oats
  • 2 tsp chia seeds
  • ¼ cup dates
  • 1 ½ cups almond milk
  • 1 grated apple
  • To serve:
  • Toasted almonds
  • Coconut yoghurt

Bircher Muesli served with Spiced Poached Plums

Method

  • To cook the plums, wash and cut in half and remove the stones
  • Place the plums in a pot with the cinnamon stick, star anise, honey and water
  • Bring to the boil and then reduce to a low simmer
  • Cook until the plums are tender
  • Set aside to cool, and then refrigerate
  • To make the bircher, place the rolled oats, chia seeds, dates, almond milk and grated apple in a bowl together and leave to soak overnight
  • To serve the muesli, place some of the overnight oats in a bowl and top with the poached plums, yoghurt and a sprinkle of chopped toasted almonds
