Ingredients
- Plum Ingredients:
- 6 x plums
- 3 tbsp honey
- 2 x star anise
- 1 cinnamon stick
- ¼ cup water
- Bircher Ingredients:
- 1 ¼ cups whole rolled oats
- 2 tsp chia seeds
- ¼ cup dates
- 1 ½ cups almond milk
- 1 grated apple
- To serve:
- Toasted almonds
- Coconut yoghurt

Bircher Muesli served with Spiced Poached Plums
Method
- To cook the plums, wash and cut in half and remove the stones
- Place the plums in a pot with the cinnamon stick, star anise, honey and water
- Bring to the boil and then reduce to a low simmer
- Cook until the plums are tender
- Set aside to cool, and then refrigerate
- To make the bircher, place the rolled oats, chia seeds, dates, almond milk and grated apple in a bowl together and leave to soak overnight
- To serve the muesli, place some of the overnight oats in a bowl and top with the poached plums, yoghurt and a sprinkle of chopped toasted almonds
