- Generous handful currants
- Juice of one lemon
- Generous slug of olive oil

Method
- A very easy salad to prepare which goes well with any BBQ food
- Grate the carrots into a bowl
- Add the chopped fresh mint and parsley
- Add a generous handful of currants
- Dress the salad with the juice of a lemon and a generous slug of olive oil
