Ingredients
- Baguettes, cut lengthwise and then into 4-inch lengths
- Grated cheese
- Finely chopped onion, bacon, tomatoes, mushrooms of your choice

Method
- Top subs with your favourite combination and grill in the oven until bubbling and browning at the edges

We called cheese and bacon grilled on toast ‘mouse traps’ when I was a kid. They were a favourite post-school afternoon tea, especially in winter. They are even better made on split baguettes, like a simple toasted sub.
