Ingredients

  • (Serves 4).
  • Ingredients: Rice
  • 1 cup white or basmati rice
  • 1 cup coconut cream
  • Half cup of water
  • Ingredients: Coriander Pesto
  • Whole bunch of coriander (Janefield Hydroponics)
  • Clove garlic
  • 1 teaspoon fresh ginger
  • Pinch of salt
  • Handful cashew nuts
  • ΒΌ cup peanut oil

Coconut Rice with Coriander Pesto

Method

  • Place 1 cup of rice in a pot and add 1 cup of coconut cream and half a cup of water
  • Bring to the boil and then turn down heat to very low and cook for 15 mins or so until the rice is tender
  • Place a bunch of coriander in food processor with a clove of garlic, a tsp of fresh ginger, pinch of salt and a small handful of cashew nuts
  • Add a quarter cup of peanut oil and whizz until a smooth paste
  • Plate up rice into individual bowls & top each serve with a dollop of coriander pesto
