Ingredients
- (Serves 4).
- Ingredients: Rice
- 1 cup white or basmati rice
- 1 cup coconut cream
- Half cup of water
- Ingredients: Coriander Pesto
- Whole bunch of coriander (Janefield Hydroponics)
- Clove garlic
- 1 teaspoon fresh ginger
- Pinch of salt
- Handful cashew nuts
- ΒΌ cup peanut oil

Coconut Rice with Coriander Pesto
Method
- Place 1 cup of rice in a pot and add 1 cup of coconut cream and half a cup of water
- Bring to the boil and then turn down heat to very low and cook for 15 mins or so until the rice is tender
- Place a bunch of coriander in food processor with a clove of garlic, a tsp of fresh ginger, pinch of salt and a small handful of cashew nuts
- Add a quarter cup of peanut oil and whizz until a smooth paste
- Plate up rice into individual bowls & top each serve with a dollop of coriander pesto
