  • Loin strip of Pork Eye Fillet

Seasoned Coating:

  • 4 Tbsp ground almond (could use a ground nut/seed mix instead)
  • 2 Tbsp Zesty Ginger & Lime Dry Seasoning Mix
  • 1 Tbsp Olive oil (to mix to a paste)

Method

  • Mix coating ingredients together
  • Roll, press coating around the outside of the eye-fillet
  • Sear all sides of meat over high
  • Heat pan, gently turning to not break the crust away
  • Finish cooking in the oven at 180 Celcius for approx 5 – 10 mins
  • Rest for 5 mins before slicing
