Ingredients
- 200g or 1 cup red lentils
- 2 cups water
- 45ml oil
- 1t cumin seeds
- 2 medium onions
- 4 cloves garlic
- 2 carrots
- ¼ t turmeric
- ¼ t cinnamon
- 1T coriander powder
- ½ - 1 t salt
- 1 chilli
- 10ml vinegar
Dahl
Method
- Wash and rinse the lentils then pour on the water (let sit for, hopefully, at least 10 minutes)
- Dice the onions, crush the garlic and grate the carrots
- Heat the oil in a medium saucepan over a medium heat
- Add the cumin seeds and fry until fragrant
- About 30 seconds or so
- Add the onion, garlic and carrots
- Lid on and reduce heat for 10 minutes
- Add the coriander and cinnamon and fry for a minute
- Add the lentils and all the water
- Add the turmeric
- Cook for 35 minutes on low to medium heat with the lid on
- Add the vinegar
- Serve beside steamed veg for dipping

This is a great accompaniment to a bowl of steamed vegetables - it helps to 'zjush' them up! But is is equally as good on its own as a "comfort food".
