Ingredients

  • 200g or 1 cup red lentils
  • 2 cups water
  • 45ml oil
  • 1t cumin seeds
  • 2 medium onions
  • 4 cloves garlic
  • 2 carrots
  • ¼ t turmeric
  • ¼ t cinnamon
  • 1T coriander powder
  • ½ - 1 t salt
  • 1 chilli
  • 10ml vinegar

Method

  • Wash and rinse the lentils then pour on the water (let sit for, hopefully, at least 10 minutes)
  • Dice the onions, crush the garlic and grate the carrots
  • Heat the oil in a medium saucepan over a medium heat
  • Add the cumin seeds and fry until fragrant
  • About 30 seconds or so
  • Add the onion, garlic and carrots
  • Lid on and reduce heat for 10 minutes
  • Add the coriander and cinnamon and fry for a minute
  • Add the lentils and all the water
  • Add the turmeric
  • Cook for 35 minutes on low to medium heat with the lid on
  • Add the vinegar
  • Serve beside steamed veg for dipping

Comments

This is a great accompaniment to a bowl of steamed vegetables - it helps to 'zjush' them up! But is is equally as good on its own as a "comfort food".
