- Half a large swede - grated (Te Mahanga Orchard)
- l fennel bulb - sliced very thin (Oamaru Organics)
- Micro greens - I used spicy radish mix (Brightside Microgreens)
- Dressing
- Half cup olive oil
- 1 tsp mustard
- ΒΌ cup apple cider vinegar
- Pinch of sugar
- Pinch of salt & pepper

Method
- Mix dressing ingredients together Mix all ingredients together in large salad bowl with the dressing
