Ingredients
- ½ c white wine vinegar
- ½ c sugar
- 1 cucumber, peeled, deseeded, and finely dice
- 3-4 fresh jalapenos, finely diced (some seeds in for heat)
- Whites of 3-4 spring onions, finely sliced into half-moons
- Salt
Fresh jalapeno and cucumber chutney
Method
- Make simple syrup by reducing white wine vinegar and sugar by half over heat
- Add your diced jalapenos, peeled and seeded cucumber and spring onion stir, adjust seasoning and remove from the heat
- Allow to stand until cool
- Serve immediately or refrigerate in a sterilised airtight jar for up to a few days
