Ingredients

  • 2 ears of corn, husked
  • handful of fresh green beans
  • 1 small red onion
  • 2-3 ripe tomatoes
  • 2 chilies, seeds in
  • any combination of fresh oregano, mint, and coriander
  • Juice of half a lemon
  • Salt and pepper

green bean and sweet corn salsa fresca

Method

  • Grill corn on a rack over a gas hob or in a hot oven
  • Allow to cool then remove kernels with a large knife, making sure you capture all the juice
  • Little steam beans before plunging into iced water to arrest the colour then dice
  • Dice the tomatoes and onion, and the chilies, and shred the herbs
  • Combine all ingredients, adjust seasoning and serve immediately
