Ingredients
- 2 ears of corn, husked
- handful of fresh green beans
- 1 small red onion
- 2-3 ripe tomatoes
- 2 chilies, seeds in
- any combination of fresh oregano, mint, and coriander
- Juice of half a lemon
- Salt and pepper
Green bean and sweet corn salsa fresca
Method
- Grill corn on a rack over a gas hob or in a hot oven
- Allow to cool then remove kernels with a large knife, making sure you capture all the juice
- Little steam beans before plunging into iced water to arrest the colour then dice
- Dice the tomatoes and onion, and the chilies, and shred the herbs
- Combine all ingredients, adjust seasoning and serve immediately
