Ingredients

  • 1 large kohlrabi stems trimmed and peeled Janefield Hydroponics
  • 1/4 red cabbage shredded
  • 2 good-sized carrots or 4 small ones grated Waewae Permaculture
  • 1/2 red onion finely sliced
  • 4 tablespoons coriander finely chopped Janefield Hydroponics
  • 1/4 cup dates sliced
  • 1/4 cup mayonnaise (your fav whole egg mayo)
  • 1 tablespoon cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt

Method

  • Combine the kohlrabi, cabbage, carrots, onions, coriander, and dates in a large bowl
  • Mix together the mayo, cider vinegar, sugar and salt
  • Pour over the slaw, and mix until fully coated, chill well before serving
