Ingredients
- 1 large kohlrabi stems trimmed and peeled Janefield Hydroponics
- 1/4 red cabbage shredded
- 2 good-sized carrots or 4 small ones grated Waewae Permaculture
- 1/2 red onion finely sliced
- 4 tablespoons coriander finely chopped Janefield Hydroponics
- 1/4 cup dates sliced
- 1/4 cup mayonnaise (your fav whole egg mayo)
- 1 tablespoon cider vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
Kohlrabi Carrot Slaw
Method
- Combine the kohlrabi, cabbage, carrots, onions, coriander, and dates in a large bowl
- Mix together the mayo, cider vinegar, sugar and salt
- Pour over the slaw, and mix until fully coated, chill well before serving
