- Gruyere Cheese
- Loaf Turkish Pide Bread
- Cream Cheese
- Filling Ingredients:
- 2 Venison & horopito sausages (cooked)
- 2 onions, halved and thinly sliced
- 1 clove garlic
- 150g spinach (approx.)
- Small handful fresh parsley (finely chopped)
- 1Tbsp olive oil
- 1 tsp brown sugar
- Salt & Pepper
Loaded Grilled Cheese Sandwiches
Method
- To make filling mix: Add oil, onion and garlic to pan and sauté over low-medium heat
- Add brown sugar, stir gently and continue to cook for approx
- 10 mins until onion mix is soft and well cooked (but not browning)
- Cut sausages in half lengthwise and slice thinly
- Turn up heat slightly
- Add to onion mix and cook for a couple of minutes
- Remove stalks from spinach and shred into fine strips
- Add this and parsley to pan and mix until just cooked and combined well
- Add salt & pepper to taste
- To Make Sandwiches: Cut thin slices of bread, on one side spread desired amount of cream cheese, add filling mix to cover, top with sliced gruyere cheese, top with another piece of bread
- Either cook in a sandwich press or in a medium heat pan until bread is browned on both sides

Gruyere Cheese is a great choice for flavour in a grilled cheese sandwich, and here’s an idea to add some extra stuffing to give it a little tasty boost. The filling mix can be made in advance and kept in the fridge until you want to put your toasted sandwich together and serve.
