Ingredients
- ½ Marrow
- ½ cup fine polenta
- ½ cup finely grated parmesan
- 1 tbsp chopped rosemary
- 1 egg
- Sea salt
- Black pepper
Marrow chips with aioli
Method
- Pre heat the oven to 200 degrees
- Line a flat tray with baking paper Lightly beat the egg in a bowl
- In another bowl mix together the polenta, parmesan, rosemary and a good pinch of salt and pepper
- Cut the marrow in half lengthways and discard the seeds in the middle
- Cut the marrow into rectangle chip shapes
- Dip the marrow in the egg and then roll in the polenta mix before placing on the lined baking tray Bake in the oven for 10-12 minutes until golden brown
- Enjoy with the Aioli as a dipping sauce
