Method

  • Pre heat the oven to 200 degrees
  • Line a flat tray with baking paper Lightly beat the egg in a bowl
  • In another bowl mix together the polenta, parmesan, rosemary and a good pinch of salt and pepper
  • Cut the marrow in half lengthways and discard the seeds in the middle
  • Cut the marrow into rectangle chip shapes
  • Dip the marrow in the egg and then roll in the polenta mix before placing on the lined baking tray Bake in the oven for 10-12 minutes until golden brown
  • Enjoy with the Aioli as a dipping sauce
