Ingredients
- 1kg Sweet potato pumpkin, peeled and deseeded
- 50g butter
- freshly grated nutmeg
- salt + pepper
MASHED SWEET POTATO PUMPKIN
Method
- Toss pumpkin in olive oil, roast in the oven for about 40 mins until tender, then mash or purée with a little butter, freshly grated nutmeg and salt and pepper to taste
- Use instead of mashed potatoes
