Ingredients

  • 1kg Sweet potato pumpkin, peeled and deseeded
  • 50g butter
  • freshly grated nutmeg
  • salt + pepper

MASHED SWEET POTATO PUMPKIN

Method

  • Toss pumpkin in olive oil, roast in the oven for about 40 mins until tender, then mash or purée with a little butter, freshly grated nutmeg and salt and pepper to taste
  • Use instead of mashed potatoes
