  • Courgette flowers - 1-2 per person
  • 2- 3 egg whites
  • flour
  • cheese - 1 slice or piece per flower
  • Salsa
  • 3 tomatoes
  • 1 red onion
  • 1 pepper
  • chillies and garlic (optional)
  • salt
  • coriander

Mexican Courgette Flowers

Method

  • Flowers Beat together 2 or 3 egg whites and gently fold in the yolks
  • Pop a piece of cheese for melting inside the flower, and roll each flower in flour then in the egg mixture
  • Fry in hot oil in a pan or wok turning once
  • Serve with cooked Salsa Salsa  Spread out on a baking tray sliced tomatoes, onions, and peppers with one or two chillies and cloves of garlic
  • Brush or spray with oil and grill till cooked and beginning to blacken
  • Cool and puree with salt and coriander in a food processor
