Ingredients
- Courgette flowers - 1-2 per person
- 2- 3 egg whites
- flour
- cheese - 1 slice or piece per flower
- Salsa
- 3 tomatoes
- 1 red onion
- 1 pepper
- chillies and garlic (optional)
- salt
- coriander
Mexican Courgette Flowers
Method
- Flowers Beat together 2 or 3 egg whites and gently fold in the yolks
- Pop a piece of cheese for melting inside the flower, and roll each flower in flour then in the egg mixture
- Fry in hot oil in a pan or wok turning once
- Serve with cooked Salsa Salsa Spread out on a baking tray sliced tomatoes, onions, and peppers with one or two chillies and cloves of garlic
- Brush or spray with oil and grill till cooked and beginning to blacken
- Cool and puree with salt and coriander in a food processor
