Ingredients
- 1 litre whole milk
- ½ cup plain natural starter that contains "live cultures" (I use Doctors Choice Bio Yoghurt)
- 120ml full fat cream (optional for more richness)

Method
- Bring milk and cream (if using) to just a boil and then set aside to cool
- Cool to about 45°c
- Pour warm milk in a glass or Pyrex bowl and add the starter Mix well by stirring the starter in, and cover
- Completely cover the bowl with towels top and bottom to maintain an even temperature
- Keep covered at room temperature, away from drafts or cool air, until set, about 8 hours
- Refrigerate until cold before serving
