Ingredients
- ½ cup smooth peanut butter (BAY Road)
- 2 Tablespoons lemon juice
- ¼ cup olive oil
- 1 Tablespoon tamari
- 2 teaspoons salt
- 3 tablespoons rice malt syrup
- ¼ cup chopped coriander
- ½ teaspoon chilli flakes
- 500g tempeh (Maries)

Peanut Butter Pinto Bean Tempeh
Method
- Combine all of the marinade ingredients in a bowl
- Cut tempeh into desired sized pieces and place in the bowl
- Refrigerate to marinate for a few hours, or overnight
- When ready to cook, preheat the oven to 180 degrees celsius
- Line a baking tray and place tempeh pieces in a single layer
- Bake in the oven for 20 minutes
