Ingredients

  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • Salt and freshly ground black pepper to taste
  • 6 tablespoons extra virgin olive oil
  • 3 tablespoons capers, drained and rinsed and roughly chopped
  • 1 large bunch flat leaf parsley, roughly chopped
  • 400g runner beans

Method

  • Make the dressing by whisking together the vinegar, honey and salt & pepper
  • Add the oil, capers and parsley and mix together
  • Boil or steam the runner beans until tender (about 3 minutes) and drain well
  • Pour the dressing over the warm beans and toss to coat well
  •
