Ingredients
- 2 tablespoons red wine vinegar
- 1 teaspoon honey
- Salt and freshly ground black pepper to taste
- 6 tablespoons extra virgin olive oil
- 3 tablespoons capers, drained and rinsed and roughly chopped
- 1 large bunch flat leaf parsley, roughly chopped
- 400g runner beans
Runner beans with a warm caper, parsley and olive oil dressing
Method
- Make the dressing by whisking together the vinegar, honey and salt & pepper
- Add the oil, capers and parsley and mix together
- Boil or steam the runner beans until tender (about 3 minutes) and drain well
- Pour the dressing over the warm beans and toss to coat well
