- Ingredients:
- ¼ cup pumpkin seeds
- ½ cup sunflower seeds
- ½ cup almonds (whole, sliced or slivered)
- ½ bunch silverbeet (approx. 200g)
- 100g Goats feta
- 150g fresh blueberries
- Dressing Ingredients:
- ¼ cup olive oil
- 3 tbsp balsamic vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
- Salt
- Pepper
Silverbeet & Blueberry Salad
Method
- Toast the seeds and almonds either in an oven at a moderate temperature or in a pan and then set aside to cool
- Wash and pat dry the silverbeet and then remove the stalk (keep the stalk and use in a stir fry)
- Finely slice the silverbeet leaves and place in a bowl with the seeds, almonds, crumbled feta and blueberries
- Make the dressing by mixing everything together in a bowl
- Drizzle the dressing over the salad
- Taste the salad and season accordingly with salt and pepper
