  • 500g Kale
  • 1-2 Tbsp Olive Oil
  • 1 small onion
  • Clove garlic
  • Handful of Chopped Raw almonds
  • Chilli Flakes (optional)
  • Dressing:
  • 1/4 c Olive Oil
  • 2Tbsp Apple Cider Vinegar
  • Thyme
  • Salt & Pepper

Simple Kale Salad

Method

  • Destem kale, roughly chop the leaves and place in a large bowl
  • Finely chop the onions, garlic, and kale stems (discard the heavy and thicker ends)
  • Heat oil in pan over medium heat, add onion, garlic, and kale stems then sauté gently until tender
  • Add saute mix to kale leaves while still warm to help soften them slightly
  • To make the dressing, add the ingredients to a bowl and whisk together until it has thicken slightly (or you can shake in jar)
  • Add dressing, almonds and chilli flakes to the kale and mix to coat well
  • I suggest leaving it to rest before serving
