- ½ cup toasted walnuts
- 1 bunch sorrel (approx. 100g)
- 20g grated parmesan
- ½ cup olive oil
- ½ tsp sea salt

Method
- Place the sorrel, walnuts, parmesan and salt in a blender and turn on
- Drizzle in the olive oil and continue to blend until it is a smooth consistency
- Enjoy the pesto on a platter with bread and vegetables or as a topping on cooked fish
