  • ½ vanilla bean (split, scrape seeds – use pod as well)
  • 12 pears, peeled, cored and cut into pieces
  • Juice of 1 lemon
  • ½ c honey
  • Star Anise
  • 1 cinnamon stick
  • 2 pinches nutmeg

Spiced Pear Compote

Method

  • Combine all the ingredients in a saucepan
  • Bring to the boil and cook over a medium heat for 20-25mins, stirring frequently
  • Remove the cinnamon, star anise and vanilla pod from compote
  • Serve warm or cold
  • Great as filling for cakes, tarts, roulades etc
