Ingredients
- ½ vanilla bean (split, scrape seeds – use pod as well)
- 12 pears, peeled, cored and cut into pieces
- Juice of 1 lemon
- ½ c honey
- Star Anise
- 1 cinnamon stick
- 2 pinches nutmeg
Spiced Pear Compote
Method
- Combine all the ingredients in a saucepan
- Bring to the boil and cook over a medium heat for 20-25mins, stirring frequently
- Remove the cinnamon, star anise and vanilla pod from compote
- Serve warm or cold
- Great as filling for cakes, tarts, roulades etc
