Ingredients
- 1 cup wholemeal flour
- ¾ cup almond meal
- 1 tsp baking powder
- 1 tsp mixed spice
- 1 tsp ginger
- ½ tsp baking soda
- ¼ cup coconut oil
- ¼ cup honey
- 1 egg
- 1 tsp vanilla
- 3 pears pureed + 1 for garnish
Spiced Pear Loaf
Method
- Line a loaf tin with baking paper
- Preheat the oven to 160 degrees
- Core 3 pears and puree in a food processor until smooth
- Melt the coconut oil and add to the pears with the vanilla, egg and honey
- Mix thoroughly before adding in the dry sieved ingredients
- Fold through until combined
- Add the loaf mixture to the tin
- Top with slices of the remaining pear and cook for 35-45 minutes until a skewer comes out clean when tested
- Allow to cool before removing from the tin and enjoy sliced with a cuppa or if you want to eat as dessert, try serving with custard!
