Ingredients

  • 1 cup wholemeal flour
  • ¾ cup almond meal
  • 1 tsp baking powder
  • 1 tsp mixed spice
  • 1 tsp ginger
  • ½ tsp baking soda
  • ¼ cup coconut oil
  • ¼ cup honey
  • 1 egg
  • 1 tsp vanilla
  • 3 pears pureed + 1 for garnish

Spiced Pear Loaf

Method

  • Line a loaf tin with baking paper
  • Preheat the oven to 160 degrees
  • Core 3 pears and puree in a food processor until smooth
  • Melt the coconut oil and add to the pears with the vanilla, egg and honey
  • Mix thoroughly before adding in the dry sieved ingredients
  • Fold through until combined
  • Add the loaf mixture to the tin
  • Top with slices of the remaining pear and cook for 35-45 minutes until a skewer comes out clean when tested
  • Allow to cool before removing from the tin and enjoy sliced with a cuppa or if you want to eat as dessert, try serving with custard!
