Ingredients
- A bag of earth gems
- ¼ cup olive oil
- 1tsp sesame oil
- 2T rice wine vinegar
- 1T soy sauce
- ½tsp miso paste
- 1cm of fresh ginger, finely grated
- whites of 2 spring onions, minced, greens shredded and reserved for serving
- 2T toasted sesame seeds
- pinch of sugar

Steamed earth gems with an Asian dressing.
Method
- Steam the earth gems by whatever means most convenient to you – a pressure cooker with a steaming basket will make super quick work of things
- Bet on a shorter time than you might think, to ensure the gems keep their shape
- Combine all but the last two ingredients in a lidded jar and shake well
- While still hot, toss the gems with the dressing, transfer to serving plates or a platter, and scatter over the shredded onion greens and toasted seeds
