  • A bag of earth gems
  • ¼ cup olive oil

  • 1cm of fresh ginger, finely grated
  • whites of 2 spring onions, minced, greens shredded and reserved for serving
  • 2T toasted sesame seeds
  • pinch of sugar

Method

  • Steam the earth gems by whatever means most convenient to you – a pressure cooker with a steaming basket will make super quick work of things
  • Bet on a shorter time than you might think, to ensure the gems keep their shape
  • Combine all but the last two ingredients in a lidded jar and shake well
  • While still hot, toss the gems with the dressing, transfer to serving plates or a platter, and scatter over the shredded onion greens and toasted seeds
