  • 200mls wild game sauce (Wild Larder)
  • 1 whole lamb ribs (Cardrona Merino Lamb)

Sticky Lamb Ribs

Method

  • Place lamb ribs in a container and cover with the sauce
  • Leave to marinate at least 3 hours, preferably over night
  • When you are ready to cook, preheat the oven to 160 degrees celsius
  • Remove the ribs from the marinade, leaving some on the meat and setting aside what remains to use for basting as it cooks
  • Place ribs in a lined roasting dish and bake for half an hour
  • Remove from the oven and using a pastry brush, baste with the leftover wild game sauce
  • I also like to grab a spoon and spoon over the fat that renders out and sits in the bottom of the roasting dish
  • Repeat this process every 15 minutes for the next hour
  • Remove from the oven at total cooking time of 1 ½ hours
  • Allow to rest for 10-15minutes
  • Cut ribs between the bones with a large knife
  • Serve alongside paper towels…finger licking good!
