  • Salad Ingredients:
  • 500g tomatoes (any mix that you like)
  • ½ red onion
  • 1 x Suyo cucumber
  • ½ cup fresh basil leaves
  • Sea salt
  • Dressing Ingredients:
  • ¼ cup red wine vinegar
  • 1 clove garlic
  • ¼ cup extra virgin olive oil
  • Pepper
  • Parmesan and Seed Crisp Ingredients:
  • 100g parmesan
  • Pumpkin seeds
  • Sesame seeds
  • Cayenne pepper

Tomato, Cucumber and Basil Salad with Parmesan and Seed Crisps

Method

  • Preheat the oven to 170 degrees
  • Line a baking tray with baking paper
  • Grate the parmesan and place in small round piles spread out on the oven tray
  • Sprinkle over each one a few pumpkin seeds, sesame seeds and a pinch of cayenne
  • Place the oven tray in the oven and cook for 12-15 minutes until the cheese is melted and has stopped bubbling
  • Remove them from the oven, they will crisp when they cool
  • To make the salad, dice the tomatoes and cucumber and place in a bowl
  • Finely chop the onion and add
  • Roughly chop the basil and mix through
  • Make the dressing by finely chopping the garlic and whisking with the vinegar and the olive oil
  • Season to taste with pepper
  • Mix the dressing into the salad and season with sea salt to taste
  • When ready to serve the salad, break the parmesan crisps over the top
