  • Salad Ingredients:
  • 200g rice noodles
  • 1 carrot
  • 1 red capsicum
  • 1 yellow capsicum
  • ½ bunch mint
  • ½ bunch parsley
  • 1 bunch coriander
  • Dressing Ingredients:
  • 2 tbsp Tamari (or soy sauce)
  • 1/3 cup lime juice
  • 1 tsp chilli flakes
  • 2 cloves garlic finely grated
  • 1 tbsp honey
  • 1 tbsp fresh ginger finely grated

Vegetarian Noodle Salad

Method

  • Make the dressing by mixing together all of the ingredients
  • Cook the rice noodles according to instructions on packet
  • Finely slice the carrot and capsicums
  • Roughly chop the herbs
  • Mix all of the prepared salad ingredients with the dressing and add salt and pepper to taste if needed

Comments

*If you want to you can add some cooked prawns or chicken to this salad but it is equally delicious as a vegetarian salad.
