Ingredients
- Salad Ingredients:
- 200g rice noodles
- 1 carrot
- 1 red capsicum
- 1 yellow capsicum
- ½ bunch mint
- ½ bunch parsley
- 1 bunch coriander
- Dressing Ingredients:
- 2 tbsp Tamari (or soy sauce)
- 1/3 cup lime juice
- 1 tsp chilli flakes
- 2 cloves garlic finely grated
- 1 tbsp honey
- 1 tbsp fresh ginger finely grated

Method
- Make the dressing by mixing together all of the ingredients
- Cook the rice noodles according to instructions on packet
- Finely slice the carrot and capsicums
- Roughly chop the herbs
- Mix all of the prepared salad ingredients with the dressing and add salt and pepper to taste if needed
Comments
*If you want to you can add some cooked prawns or chicken to this salad but it is equally delicious as a vegetarian salad.
