Ingredients

  • 1 head broccoflower (Oamaru Organics)
  • ½ cup extra virgin olive oil
  • zest of half a lemon
  • juice of 1 lemon
  • 2 garlic cloves – peeled and crushed or grated
  • ½ teaspoon paprika
  • 1 sprig of fresh thyme
  • ½ cup tahini
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon chilli flakes

Whole Baked Broccoflower:

Method

  • Preheat the oven to 190 degrees celsius
  • Combine olive oil, zest and juice of lemon, garlic, chilli, paprika, thyme, tahini, salt and pepper and whisk until well combined
  • Dip the head of broccoflower in the glaze and place in a lined baking dish with a lid
  • Tip the remaining glaze over the top of the broccoflower
  • Bake covered for 30 minutes then remove the lid, lower the temperature to 160 degrees and bake for a further 25 mins
  • Check every 5 or so minutes during the last 20 mins of cooking to be sure the glaze isn’t burning
  • Remove when golden
