  • Ingredients:
  • ½ cup black olives
  • 2 tbsp capers
  • ½ red onion
  • 1 cup flat leaf parsley
  • 750g new potatoes
  • Salt
  • Pepper
  • Dressing Ingredients:
  • 2tbsp white wine vinegar
  • 2 tsp Dijon mustard
  • ½ tsp sumac
  • 1/3 cup olive oil

Zesty New Potato Salad

zesty new potato salad

Method

  • Wash and cut the potatoes into medallions
  • Cook the potatoes in salted water until just tender
  • Drain the water off and then cool immediately under cold running water
  • Once the potatoes are cold, drain off the water
  • Cut the olives and capers roughly
  • Finely dice the red onion and parsley
  • Make the dressing by mixing all of the ingredients together
  • Mix all of the salad ingredients together and pour over the dressing
  • Check the seasoning and add salt and pepper to taste if needed
