- Ingredients:
- ½ cup black olives
- 2 tbsp capers
- ½ red onion
- 1 cup flat leaf parsley
- 750g new potatoes
- Salt
- Pepper
- Dressing Ingredients:
- 2tbsp white wine vinegar
- 2 tsp Dijon mustard
- ½ tsp sumac
- 1/3 cup olive oil
Zesty New Potato Salad
Method
- Wash and cut the potatoes into medallions
- Cook the potatoes in salted water until just tender
- Drain the water off and then cool immediately under cold running water
- Once the potatoes are cold, drain off the water
- Cut the olives and capers roughly
- Finely dice the red onion and parsley
- Make the dressing by mixing all of the ingredients together
- Mix all of the salad ingredients together and pour over the dressing
- Check the seasoning and add salt and pepper to taste if needed
