  • Salad Ingredients:
  • 2 x pink lady apples
  • 1 cup walnuts
  • 1 cup red quinoa
  • 1 bunch spinach
  • 2 tbsp finely sliced fresh chives
  • Maple dressing ingredients:
  • 1 ½ tbsp maple syrup
  • 2 tsp cider vinegar
  • 1 tsp wholegrain mustard
  • ¼ cup olive oil
  • Juice ½ lemon
  • Salt & pepper

apple spinach and quinoa salad with toasted walnuts and a maple mustard dressing

Method

  • Preheat the oven to 200 degrees and toast the walnuts for 5-10 minutes
  • Once cool roughly chop
  • Make the maple dressing by mixing together the ingredients and seasoning to taste with salt and pepper
  • Cook the quinoa as per instructions on packet and then set aside to cool
  • Wash and roughly chop the spinach, slice the apples and cut into matchsticks
  • Mix the spinach, apples, walnuts, chives and dressing together with the quinoa
  • Season to taste with salt and pepper
