Ingredients
- Salad Ingredients:
- 2 x pink lady apples
- 1 cup walnuts
- 1 cup red quinoa
- 1 bunch spinach
- 2 tbsp finely sliced fresh chives
- Maple dressing ingredients:
- 1 ½ tbsp maple syrup
- 2 tsp cider vinegar
- 1 tsp wholegrain mustard
- ¼ cup olive oil
- Juice ½ lemon
- Salt & pepper
Apple, spinach & quinoa salad with toasted walnuts and a maple, mustard dressing
Method
- Preheat the oven to 200 degrees and toast the walnuts for 5-10 minutes
- Once cool roughly chop
- Make the maple dressing by mixing together the ingredients and seasoning to taste with salt and pepper
- Cook the quinoa as per instructions on packet and then set aside to cool
- Wash and roughly chop the spinach, slice the apples and cut into matchsticks
- Mix the spinach, apples, walnuts, chives and dressing together with the quinoa
- Season to taste with salt and pepper
