  • 500 grams ripe fresh apricots
  • 1 cup coconut cream
  • 1/3 cup honey

APRICOT ICE CREAM (DAIRY FREE)

Method

  1. Remove stones from the apricots and cut them into small pieces.
  2. Spread out the apricots on a flat tray, place the tray in the freezer, and leave overnight.
  3. Use food processor to make the ice cream. First, add the frozen apricots and pulse until they have broken down. While the processor is running, pour in the honey and the cream. Let it run for 1-2 minutes so that it is mixes well, and taste. Add more honey if it's too tart for your liking.
  4. Pour the mixture into a container suitable for the freezer. Serve in a cone or with your favourite dessert.
