- Red Cabbage
- Cavolo Nero Kale (stripped off stems)
- Handful of pumpkin seeds
- Dressing Ingredients:
- ½ c filtered water
- ½ c tahini
- ¼ c apple cider vinegar
- 2 Tbsp tamari
- 2 Tbsp lemon juice
- 1 tsp sea salt
- 1 clove garlic
- 1 Tbsp sesame seeds
- 2/3 c olive oil
- 1 Tbsp finely chopped parsley
Autumn Slaw with Garlic Tahini Dressing
Method
- Shred cabbage and kale, toss in a bowl with pumpkin seeds, add dressing and mix well just before serving
- Dressing Method: Combine all ingredients except oil and parsley, blend on high for 30 secs, until smooth
- Turn blender down to medium and slowly pour in oil until fully combined, remove from blender and stir in herbs
- Can be kept in a refrigerator for approx
- 2 weeks
