Ingredients
- 400g approx. firm tofu
- 1 medium onion, peeled and chopped
- 1/4 c approx. unflavoured soy milk or another nut milk
- 1 tsp turmeric
- ½ tsp onion powder
- ½ tsp garlic powder
- 1 tsp nutritional yeast
- 1 tsp olive or coconut oil
- A good helping of salt and pepper
- Sliced green cloud chilli
- Cherry tomatoes
Breakfast tofu scrambles
Method
- Cook chopped onion over a medium heat in oil of your choice until a golden colour
- Set aside
- In the same pan, add the tomatoes, a dash of salt and pepper and cook until the skins begin to split
- Set aside, keeping warm, while you cook the tofu
- Drain your tofu and pop into a bowl Mash it up with the back of a fork until it resembles scrambled egg
- Add all the other ingredients including onion and stir through
- Transfer to a frying pan and gently heat through Serve on toast or as part of a breakfast
- Top with fresh chillies and warm tomatoes

Turn this into the ultimate breakfast by adding your favourite extras like hash browns, mushrooms, wilted spinach or kale (add while your cooking the tofu), grilled asparagus or red peppers.
