Ingredients
- For the Pancakes
- 3 eggs
- 125g buckwheat flour
- 1 large tsp honey
- A big pinch of baking powder
- 140 ml milk
- Pinch sea salt
- Oil and 25g butter for cooking
- Caramelised apples
- 4 apples, cored and diced
- 50g butter
- 25g sugar
- ½ tsp cinnamon
- ½ lemon, juice
- Greek yoghurt to serve
CARAMELISED APPLES WITH BUCKWHEAT PANCAKES
Method
- To begin start by making the caramelised apples – add the butter to a medium sized pan and allow the butter to foam a little, add the apples, cinnamon, sugar and a little squeeze of lemon juice
- Cook until the apples and golden and sticky (about 5 minutes)
- For the pancakes - separate the eggs
- Place the yolks in a large bowl and add the buckwheat flour, honey, baking powder and a pinch of salt and mix thoroughly
- Slowly add the milk to make a smooth batter
- You can do all this the night before! In a separate bowl, whisk the egg whites to firm peaks and fold gently into the yolk mixture (this will aerate the mixture)
- Heat a large fry pan with a little oil and a small knob of butter
- Drop spoonfuls of mixture into the hot pan and cook for 2-3 minutes on each side
- Serve with the warm sticky apples and a generous dollop of yoghurt
