Ingredients
- 3-4 Medium Carrots (approx. 400g)
- 2 cups Cashew Nuts/Seeds, Nut mix
- 1 medium onion
- 2 cloves garlic
- 1tsp paprika
- 1tsp cumin
- 1tsp salt
Carrot Nut Roast Loaf
Method
- Chop and cook or steam carrots until tender, then mash
- Finely chop onions & garlic and saute over medium heat until just tender
- Add Nuts or mixture of seeds & nuts into food processer and blitz to a rough crumb
- Add all prepared ingredients together with seasoning into a bowl and mix together until fully combined
- Press into lined/oiled loaf pan, or shape into loaf shape and put onto lined baking tray
- Cook at 200 degrees celcius for 30 mins, then cool in tin for 10 mins before removing
