  • 2 eggs
  • 1 tablespoon stevia (or sub in sugar)
  • ½ cup Gilberts Lievito GF flour mix
  • 1 teaspoon vanilla extract
  • ¼ teaspoon each of ground ginger, all spice, cardamom, cloves and cinnamon
  • 2 cups of peeled and diced granny smith apples (Willowbrook) – diced quite small, 1cm cube or smaller
  • 1 tsp baking powder
  • ½ cup coconut oil

Chai Spiced Green Apple Fritters

Method

  • Beat the eggs in a mixing bowl
  • Add in the stevia and vanilla and mix until well combined
  • Sift in the flour mix, baking powder and chai spices and mix well
  • Stir through the diced apples
  • Heat the coconut oil in a small frying pan on medium/low heat
  • Batch fry tablespoons of fritter mix, flipping once golden brown
  • Dust with icing sugar
  • Enjoy!
