- ½ block of soft tofu
- 6 eggs -separated
- ½ cup Dutch coco powder
- 1/3 cup brandy
- 200gms dark chocolate pieces
- ½ cup almond mylk
- 1 cup sugar

CHOCOLATE TOFU BROWNIE
Method
- Preheat the oven to 170 degrees C
- Put the tofu, egg yolks, brandy and coco powder in a mixing bowl and beat until well mixed into a nice creamy texture
- Put the chocolate pieces and almond milk in a bowl over a pot of bowling water and melt
- Once melted, add to the tofu mix, and combine well
- In another bowl, whisk the egg whites
- Once they begin to firm up, add the sugar a little at a time, until you reach stiff peaks
- Then gently fold the egg whites into the tofu mix, small amounts at a time, until it is all combined
- Pour into a greased baking dish and cook for 35minutes or until a cake tester comes out clean
