Ingredients

  • 450 grams fresh very ripe apricots
  • 1 ½ cups thick cream
  • ½ cup whole milk
  • 1/3 cup honey
  • 2 Tbsp fresh lemon juice

CHUNKY FRESH APRICOT ICE CREAM

Method

  1. I used an ice cream maker machine for this recipe, but it can also be done in a mixer/food processor. Put the bowl of the machine in the freezer as per the instructions.
  2. Remove stones from the apricots and cut them up to the size you like for the ice cream.
  3. Once the bowl has frozen, set up the machine and have it running before you start to add the ingredients.
  4. Pour in the cream and milk and run for 20 minutes. Once the ice cream has formed, add the other ingredients after the milk and cream have thickened up. Leave for a further 5 minutes.
  5. Remove the blade and pour it into a freezer-safe container. Put it back in the freezer and serve it as you like. It goes amazingly on an apricot crumble.
