Ingredients
- 1 tin black bean
- 1 punnet of cherry tomatoes
- 3 cobs corn
- 1 red onion
- 1 clove garlic
- 2 chilli
- 2 lemon, zest and juice
- Salt
- Pepper
- Handful of coriander
- Corn tortilla chips to serve
Corn and Black Bean Salsa with Corn Chips
Method
- Cook the corn in boiling water, drain and allow to cool before cutting the corn from the cobs
- Place the corn off one of the cobs into the food processor with the lemon zest and juice and blend until it is a puree
- Put the whole corn kernels and the puree into a bowl
- Cut the cherry tomatoes into quarters, finely dice the red onion, garlic and chilli
- Roughly chop the coriander
- Drain the black beans and rinse well
- Mix everything in with the corn and then season to taste with salt and pepper
- Enjoy as a snack with tortilla chips
