Ingredients

  • 1 tin black bean
  • 1 punnet of cherry tomatoes
  • 3 cobs corn
  • 1 red onion
  • 1 clove garlic
  • 2 chilli
  • 2 lemon, zest and juice
  • Salt
  • Pepper
  • Handful of coriander
  • Corn tortilla chips to serve

Corn and Black Bean Salsa with Corn Chips

Method

  • Cook the corn in boiling water, drain and allow to cool before cutting the corn from the cobs
  • Place the corn off one of the cobs into the food processor with the lemon zest and juice and blend until it is a puree
  • Put the whole corn kernels and the puree into a bowl
  • Cut the cherry tomatoes into quarters, finely dice the red onion, garlic and chilli
  • Roughly chop the coriander
  • Drain the black beans and rinse well
  • Mix everything in with the corn and then season to taste with salt and pepper
  • Enjoy as a snack with tortilla chips
