Ingredients
- 2 medium courgettes
- 2 cloves roasted garlic
- Salt
- Pepper
- Handful basil + extra to serve
- 35g butter
- Juice of ½ lemon
- 100g smoked salmon
Courgette and Smoked Salmon with Garlic butter and Basil
Method
- Cut the courgette into spaghetti using a spiralizer or slice on a mandolin
- Roughly chop the handful of basil and mash the roast garlic cloves
- Heat a pan on a moderate to high heat
- Add the butter and the courgettes and cook for a minute before adding the garlic
- Continue to cook for a further minute before adding the chopped basil, a good sprinkle of salt and pepper and the lemon juice
- Remove from the heat and serve immediately
- Flake the smoked salmon over the top and sprinkle over some extra torn basil leaves
- *The courgette cooks very quickly, don’t overcook or it will be mushy and not that pleasant
- A bit of crunch is good!
