  • 2 medium courgettes
  • 2 cloves roasted garlic
  • Salt
  • Pepper
  • Handful basil + extra to serve
  • 35g butter
  • Juice of ½ lemon
  • 100g smoked salmon

Courgette and Smoked Salmon with Garlic butter and Basil

Method

  • Cut the courgette into spaghetti using a spiralizer or slice on a mandolin
  • Roughly chop the handful of basil and mash the roast garlic cloves
  • Heat a pan on a moderate to high heat
  • Add the butter and the courgettes and cook for a minute before adding the garlic
  • Continue to cook for a further minute before adding the chopped basil, a good sprinkle of salt and pepper and the lemon juice
  • Remove from the heat and serve immediately
  • Flake the smoked salmon over the top and sprinkle over some extra torn basil leaves
  • *The courgette cooks very quickly, don’t overcook or it will be mushy and not that pleasant
  • A bit of crunch is good!
