  • 4 pears
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp honey
  • 50g butter
  • Praline ingredients:
  • 1 cup peeled and roasted hazelnuts
  • ½ cup sugar
  • 2 tbsp water
  • Sea salt
  • Whipped cream to serve

Hazelnut Praline Roasted Pears

Method

  • Make the praline, line a baking tray with paper and set aside Place the sugar and water in a pot on high heat
  • Dissolve the sugar in the water and bring to a boil
  • Do not stir the pot once the sugar and water boils or the sugar will crystalize
  • Keep boiling until the sugar turns golden brown
  • Working quickly add the hazelnuts and pour onto the baking tray
  • Sprinkle over a little sea salt Allow the praline to cool completely before breaking up and placing in a food processor
  • Blend until it is a medium-fine crumb texture Pre heat the oven to 180 degrees Wash the pears and cut in half lengthways
  • Remove the core and a make a small cavity
  • Place the pears in a baking tray skin side down and fill the pears with the praline crumb
  • Mix together the cinnamon and nutmeg and sprinkle over the pears
  • Drizzle over the honey and dot over the butter Cover the baking dish with foil and bake for approx
  • 40 minutes until the pears are tender Remove the foil and bake for another 5-10 minutes until golden Serve warm with whipped cream
