Ingredients
- 4 pears
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1 tbsp honey
- 50g butter
- Praline ingredients:
- 1 cup peeled and roasted hazelnuts
- ½ cup sugar
- 2 tbsp water
- Sea salt
- Whipped cream to serve
Hazelnut Praline Roasted Pears
Method
- Make the praline, line a baking tray with paper and set aside Place the sugar and water in a pot on high heat
- Dissolve the sugar in the water and bring to a boil
- Do not stir the pot once the sugar and water boils or the sugar will crystalize
- Keep boiling until the sugar turns golden brown
- Working quickly add the hazelnuts and pour onto the baking tray
- Sprinkle over a little sea salt Allow the praline to cool completely before breaking up and placing in a food processor
- Blend until it is a medium-fine crumb texture Pre heat the oven to 180 degrees Wash the pears and cut in half lengthways
- Remove the core and a make a small cavity
- Place the pears in a baking tray skin side down and fill the pears with the praline crumb
- Mix together the cinnamon and nutmeg and sprinkle over the pears
- Drizzle over the honey and dot over the butter Cover the baking dish with foil and bake for approx
- 40 minutes until the pears are tender Remove the foil and bake for another 5-10 minutes until golden Serve warm with whipped cream
