HONEY CUSTARD

Method

  • Beat egg yolks with honey until well mixed but not too frothy
  • Heat milk in pan, when hot add to top of double boiler or into a bowl that sits comfortably over a saucepan of water, do not let the bowl touch the simmering water
  • Slowly add yolk mixture while whisking, keep stirring regularly, keeping mixture smooth over med/low heat until thickens
  • Remove from the heat, and stir occasionally as it continues to cool
  • *Serving Suggestion: Serve by itself or goes well with berries or fruit of choice. Can served hot as a pudding on its own with a sugar crust top if desired
