Ingredients
- 1 bunch of kale (Ettrick Gardens)
- 1 teaspoon salt
- 1 apple – cut into matchsticks
- ½ cup sliced almonds
- ½ cup dried cranberries
- ¼ cup olive oil
- 3 Tablespoons apple cider vinegar
- Cracked pepper to taste
Kale, Apple, Cranberry and Almond Slaw
Method
- Finely slice the kale into thin strips and rub the salt into the kale until it becomes a richer, more vibrant green
- Add the remaining ingredients and stir to combine
- Enjoy
