Ingredients
- 600g lamb mince
- 2 cloves garlic
- 1 tsp dried mint
- 1 tsp oregano
- 1 tsp cumin
- Salt
- Pepper
Sauce ingredients:
- 1 onion
- 2 red capsicum
- 3 cloves garlic
- 1 ½ tsp coriander seeds
- ½ tsp chilli flakes
- 2 tsp smoked paprika
- 2 tbsp tomato paste
- 1 tin of chopped tomatoes
- Salt
- Pepper
Lamb meatballs with spicy capsicum sauce
Method
Make the sauce:
- Finely chop the onion and garlic and red capsicum.
- Sautee the onion and garlic on a moderate heat until softened, then add the red capsicum. Continue to cook for a few minutes before adding all of the spices and tomato paste. Cook for another 2 minutes until fragrant and then add the chopped tomatoes. Simmer for 20 minutes and season with salt and pepper to taste.
- While the sauce is cooking make the meatballs.
Make meatballs:
- Preheat the oven on to fan grill.
- In a bowl, place the mince and spices, season with salt and pepper. Use hands to make sure everything is well combined.
- Roll the mince into balls and place on a lightly oiled baking tray. If the meatballs are too soft when rolling you can add a couple of tablespoons of breadcrumbs but it’s not necessary if the mince rolls well without it
- Put the tray in the oven and cook until starting to brown.
- Turn the meatballs over and cook until golden and cooked through in the middle.
- Mix the meatballs through the warm sauce and serve.
- This dish would be nice served with cous cous.
