  • 1 large leek
  • 1 granny smith apple
  • 50g butter
  • 1 tsp fresh thyme
  • 1 Tbsp honey
  • Salt & pepper
  • 50g Feta
  • 1 sheet of puff pastry

LEEK, APPLE AND FETA TARTE TATIN

Method

  • Preheat the oven to 200 degrees C
  • Cut the leek into 1 cm rounds and rinse under cold water keeping the leeks in rounds if possible
  • Wash and finely chop the thyme Wash and cut the apple into quarters and remove the pips, slice into thin slices Take a sheet of puff pastry and cut the corners off to make a round, cut 3 slits in the middle so the steam can escape when cooking Heat a pan
  • Place the leeks in the pan, season with salt and pepper and cook until they are starting to colour nicely and remove from the heat Add the apple slices on top of the leeks, drizzle over the honey and sprinkle over the chopped thyme Place the sheet of pas
  • 20mins until the pastry is golden brown and cooked Leave to cool for 5 minutes before inverting onto a serving plate Sprinkle over the feta and a little extra thyme to garnish and serve
