Ingredients
- 6 granny smith apples
- 1 ½ Tablespoons honey (manuka honey is great for this recipe)
- 50 grams of butter or ghee
- ½ teaspoon cinnamon
- ½ teaspoon ginger powder
- 1 sheet of ready-made flaky pastry (thawed)
- edible gold leaf flakes (optional for decoration)
MATARIKI FLIPPED APORO TART

Method
- Preheat the oven to 200°C.
- Prepare apples, peel, and slice thinly. Using a star shape cookie cutter, cut the stars and place them in a bowl of water while preparing the syrup.
- In an oven-proof fry pan, melt butter and honey over medium heat. Stir in cinnamon and ginger. Remove from heat.
- Drain the apples, toss them lightly in a clean tea towel.
- Lay the apples into the syrup mix and return to the heat. Let the apples start to caramelise, gently moving the pan back and forward to prevent burning.
- When the apples are looking golden, place the sheet of puff pastry over the pan and tuck the edges of the pastry into the sides of the pan.
- Place in the oven and bake for 15-20 minutes until the pastry is golden and puffy.
- Remove and let it sit for a few minutes before turning the tart out.
- Use a large dinner plate to cover the whole top of the pan, and using oven mitts, carefully flip the whole thing and place it down on the bench. Remove the pan and sprinke with gold leaf flakes (if using).
- Serve hot or warm with whipped cream or ice cream.
