Ingredients
- 6 granny smith apples
- 1 ½ Tablespoons honey (manuka honey is great for this recipe)
- 50 grams of butter or ghee
- ½ teaspoon cinnamon
- ½ teaspoon ginger
- 1 sheet of ready-made flaky pastry (thawed)
- edible gold leaf flakes (optional for decoration)
MATARIKI FLIPPED APORO TART
Method
- Preheat the oven to 200°C
- Prepare apples, peel, and slice thinly, using a star shape cookie cutter
- Cut the stars and place them in a bowl of water while preparing the syrup
- Using an oven-proof fry pan, place the butter and honey in the pan on medium heat to melt and stir
- Add spices and mix
- Remove from the heat and drain the apples
- Toss them lightly in a clean tea towel
- Lay the apples into the syrup mix and return to the heat
- Let the apples start to caramelise
- Moving the pan back and forward will help to stop it from burning
- When the apples are looking golden, place the sheet of pastry over the pan and tuck the edges of the pastry into the sides of the pan
- Place in the oven and cook for 15-20 minutes until the pastry is golden and puffy
- Remove and let it sit for a few minutes before turning the tart out
- Use a large dinner plate to cover the whole top of the pan, and using oven mitts, carefully flip the whole thing and place it down on the bench; remove the pan
- Sprinke with gold leaf flakes
- Serve hot or warm with runny cream or ice cream
- Preheat the oven to 250 degrees Celcius, it needs to be hot. Cut cauliflower into bite-size pieces (if you have a crowd to feed, you could roast the cauliflower whole). Toss in olive oil then sprinkle with paprika, cumin, coriander seeds, salt, and pepper
