- Agria Potatoes – pre-cooked & cubed
- Red Sauce Ingredients:
- 2 Tbsp olive oil
- 1 onion diced
- 1 clove garlic, finely chopped
- Red Jalapeno chillies, chopped (amount to taste)
- 1 tsp smoked paprika
- 1 can tomatoes
- Garlic Sauce (Aioli) Ingredients:
- 3-4 garlic cloves
- ¾ c olive oil
- 1 egg yolk
- Salt & pepper to taste
- 1 tsp lemon juice
Potatas Bravas (Crispy Potatoes with Spanish tomato & garlic sauces)
Method
- Potato Method: Fry off potato cubes in oil until fully cooked and crispy
- Served topped with some of the tomato & garlic sauces
- Tomato Sauce Method: Add all ingredients to a pan and cook over a medium heat until fully combined and cooked through
- Garlic Sauce Method: Crush garlic (traditionally in a mortar & pestle) add yolk and mix, then gradually add the oil to create a thick sauce, add salt to taste and finally the lemon juice
- Alternatively this can be done in a food processor, but would be easier with a larger amount, so perhaps a stick blender in its upright jug (both sauces will store in a container in the fridge for approx
