  • 1 onion diced
  • 1 clove garlic, finely chopped
  • Red Jalapeno chillies, chopped (amount to taste)
  • 1 tsp smoked paprika
  • 1 can tomatoes
  • Garlic Sauce (Aioli) Ingredients:
  • 3-4 garlic cloves
  • ¾ c olive oil
  • 1 egg yolk
  • Salt & pepper to taste
  • 1 tsp lemon juice

Method

  • Potato Method: Fry off potato cubes in oil until fully cooked and crispy
  • Served topped with some of the tomato & garlic sauces
  • Tomato Sauce Method: Add all ingredients to a pan and cook over a medium heat until fully combined and cooked through
  • Garlic Sauce Method: Crush garlic (traditionally in a mortar & pestle) add yolk and mix, then gradually add the oil to create a thick sauce, add salt to taste and finally the lemon juice
  • Alternatively this can be done in a food processor, but would be easier with a larger amount, so perhaps a stick blender in its upright jug (both sauces will store in a container in the fridge for approx
