- 3 snowball turnips
- 3 golden beetroot
- 1 carrot
- 100g cooked bacon
- Alfalfa sprouts
- Dressing:
- 1 tbsp chipotle in adobo sauce
- 1 tbsp white miso
- 1 tbsp honey
- ½ cup oil
- ¼ cup rice wine vinegar
- Salt
- Pepper
Raw Vegetable Salad with Bacon and Miso Dressing
Method
- To make the dressing, place the chipotle, miso, rice wine vinegar and honey in a food processor and blend until smooth
- With the food processor running, drizzle the oil in until emulsified
- Peel the carrot, turnips and beetroot and thinly slice on a mandolin or use the slice function on a food processor
- Slice the cooked bacon, and mix together with the sliced vegetables, sprouts and dressing to taste
- Season with salt and pepper
