  • 3 snowball turnips
  • 3 golden beetroot
  • 1 carrot
  • 100g cooked bacon
  • Alfalfa sprouts
  • Dressing:
  • 1 tbsp chipotle in adobo sauce
  • 1 tbsp white miso
  • 1 tbsp honey
  • ½ cup oil
  • ¼ cup rice wine vinegar
  • Salt
  • Pepper

Method

  • To make the dressing, place the chipotle, miso, rice wine vinegar and honey in a food processor and blend until smooth
  • With the food processor running, drizzle the oil in until emulsified
  • Peel the carrot, turnips and beetroot and thinly slice on a mandolin or use the slice function on a food processor
  • Slice the cooked bacon, and mix together with the sliced vegetables, sprouts and dressing to taste
  • Season with salt and pepper
