  • 2 medium sized quince
  • 2 tbsp maple syrup
  • ¾ cup walnuts (toasted and roughly chopped)
  • 50g goat cheese
  • Salt
  • Pepper
  • Oil
  • Handful of spinach
  • Dressing Ingredients:
  • 1 tsp wholegrain mustard
  • Juice of 1 lemon
  • 1 tsp maple syrup
  • 1 tbsp oil

Roasted Quince, Walnut & Goats Cheese Salad

Method

  • Preheat the oven to 200 degrees
  • Make the dressing by mixing all of the ingredients together and then set aside
  • Wash the quince and then cut into quarters and remove the core
  • Slice the quince and then place in a roasting tray
  • Drizzle with oil, the 2 tbsp of maple syrup and some salt and pepper
  • Roast in the oven for about 15 -20 minutes until the quince is tender
  • To make the salad, toss through the spinach leaves and walnuts, crumble over the goat cheese and drizzle over some dressing
  • Check the seasoning and add salt and pepper if needed to taste
