Ingredients
- Ingredients:
- 2 medium sized quince
- 2 tbsp maple syrup
- ¾ cup walnuts (toasted and roughly chopped)
- 50g goat cheese
- Salt
- Pepper
- Oil
- Handful of spinach
- Dressing Ingredients:
- 1 tsp wholegrain mustard
- Juice of 1 lemon
- 1 tsp maple syrup
- 1 tbsp oil
Roasted Quince, Walnut & Goats Cheese Salad
Method
- Preheat the oven to 200 degrees
- Make the dressing by mixing all of the ingredients together and then set aside
- Wash the quince and then cut into quarters and remove the core
- Slice the quince and then place in a roasting tray
- Drizzle with oil, the 2 tbsp of maple syrup and some salt and pepper
- Roast in the oven for about 15 -20 minutes until the quince is tender
- To make the salad, toss through the spinach leaves and walnuts, crumble over the goat cheese and drizzle over some dressing
- Check the seasoning and add salt and pepper if needed to taste
